1 Tablespoon extra-virgin olive oil 

2 Tablespoons fresh parsley, chopped

4 Tablespoons onion,  finely chopped

1 cup artichoke hearts, drained and quartered

1/2 pound, extra-firm tofu, drained well

1 Teaspoon garlic powder

1/4 Teaspoon black pepper

Tumeric, sprinkle enough to color the tofu a golden yellow

i was so thrilled to see this recipe here, as it looked to be a good deal like one of my favorite items on the menu at my favorite brunch place.

i found this super bland and unappetizing, sigh. perhaps one day i'll know my spices better and can add some things to this recipe to be more appealing.

If you are looking for a way to spice-up this dish, I would add sea salt, chili powder, cayenne spice, and/or parika if you are wanting more of a Mexican dish.  Otherwise add fresh ginger and garlic.  Maybe even soya sauce.   Try experiment.
