Ingredients

2 cups dry green or brown lentils

4 - 6 cups water

2 cups gluten free organic chicken broth

3 tablespoons extra virgin olive oil

4 cloves garlic, chopped

2 medium onions, diced

4 celery stalks, finely chopped

6 slender carrots, scraped and sliced thinly into coins

Approximately 4 ounces frozen chopped spinach

1/2 teaspoon oregano

1 teaspoon chili powder

Salt and pepper to taste

   How many ounces in the broth?  Is there a specific brand you use? Pacific?

Hi Kathie:

I usually make my own stock, so I don't have a specific brand to recommend. One 15.5 ounce can is enough.   If someone is a vegetarian and wants to make it without it, the broth can be replaced with equal water.  I just like adding it because it makes it richer.

When dairy is back in the diet, a grating of some good quality parmesean cheese makes it even more delicious!Laughing

I have been eating this soup all week and I never tire of it!  Hope you like it as much as I do.

I made this yesterday and it's wonderful!  I had a bowl for lunch and another one for dinner.   I added a small piece of Kombu for a few minutes to help take the gas out of the beans.

I primarily use the kombu

I primarily use the kombu for the minerals, as I am not that fond of the other seaweeds.  I don't know about the digestibility factor as I find that if I pre-soak the beans and throw the soaking water away that I don't have any problems.  But after cooking the beans I chop the kombu up very finely and throw it back in with the beans.  It tends to dissolve and you don't know it is there.  It works best with the darker colored beans.  If you are making navy bean soup and want it to stay light colored then I won't use the kombu.

Hi Lanternshine!

It's kind of scary how our culture has bought into the canned and processed food route for most of our meals, isn't it?  I pick up a can of Progresso or any other soup at the grocery store and I can't make myself buy it.  First, the cost is ridiculous (but you are paying for convenience, I suppose) and second, the amount of sodium and fat in most products just sickens me!

I will be forever grateful to Dr. Hyman and his wonderful staff for their part in my improving health.  Every day I use my kitchen as a test lab, using all the fresh, healthy ingredients on our list.  I made a pretty good all-bean chili last night! Smile

Thanks for submitting your recipie. It just reminded me of how much I love lentil soup and to make it again.  This time I may add some brown rice on the side. I take my lunch to work everyday and this sounds great. I just read in my Natural alternative mag. that I am a "Veda" personality, and I should stick with warm foods. So, this will be a great start for me.
